This recipe came from the Waitrose website.

Just in case they remove it from their site, I’ll copy it here:

Thinly peel the zest from 4 washed and unwaxed lemons. Put in a bowl along with all their juice, 100g of caster sugar and 600ml boiling water. Stir well to dissolve the sugar, cover and leave to cool completely. Strain into a jug (discarding the zest) add ice and dilute with approx 400ml chilled water. Add more sugar if you like it sweeter.

Makes approx 1 litre.

You can of course store the strained concentrate in the fridge and dilute it as you need it.
