River Cottage Honey & Peanut Butter Booster Bars.

For the fruit I used dried, unsulphured apricots. And for the seeds, I used 50g pumpkin seeds, 50g sunflower seeds and 50g sesame seeds.

One banana loaf

This recipe makes quite a small loaf. If you have two really ripe bananas just double the recipe for a lager loaf. It’s very bananary and easy to bake with children.

In a large bowl combine 4 tablespoons of olive oil, 75 g/3oz golden caster vanilla sugar, 1 egg (lightly beaten) 1 ripe banana (mashed), 1 tablespoon milk.

Sift over 110g/4oz Self raising flour and 1/2 tsp baking powder.

Mix well, beating for two minutes until thoroughly mixed.

Pour into a greased and lined 1lb loaf tin (2lb tin for the larger loaf)  and bake for 30-40 minutes at 180 c.

Cool for 10 minutes before turning out.
